2 (8.8-ounce packages) Uncle Ben's Ready Rice, Whole Grain Brown or Long Grain & Wild flavor 1 tablespoon olive oil 2 medium or 1 large zucchini, quartered lengthwise and sliced crosswise 1 red bell pepper, chopped 1 cup cherry or grape tomatoes, halved 1 (4-ounce) tube herbed goat cheese, crumbled 2 tablespoons chopped fresh herbs such as basil, oregano or thyme 2 tablespoons fresh lemon juice Salt and pepper to taste
Cook rice in microwave according to instructions on package. In the meantime, heat oil over medium heat in frying pan and saute zucchini and red pepper until just softened, about 5 minutes. Toss rice, zucchini, red pepper, tomatoes, goat cheese, herbs and lemon juice in large bowl, then season to taste with salt and pepper. Serve warm or at room temperature.
